Ben’s Cloudy Lemonade Scones

Happy New Year! We’ve had a lovely festive season eating and drinking too much, and now it’s time to stick to all those sensible New Year’s resolutions… Although if like me, you find it hard to go more than a few days without a bit of a treat, I’ve got a delicious recipe for Ben’s Cloudy Lemonade Scones which are just perfect for tea time on these cold January days.
Ingredients
125ml Ben Shaws Cloudy Lemonade
300g self-raising flour, sifted
½ teaspoon salt
55g caster sugar
125ml double cream
2 tablespoons milk
You will also need a 6cm round cutter and a large greased baking tray.
Method
Preheat the oven to 220°C. Put the flour, sugar and 1/2 teaspoon salt in a large bowl. Add the cream and Ben Shaws Cloudy Lemonade and mix. Turn out onto a lightly floured surface and knead lightly until combined into a soft dough.
Press the dough to a thickness of 2cm and use your round cutter to cut out about 8 scones (You can shape them by hand if you don’t have a cutter.) Place on the baking tray and brush the tops with milk.
Bake for 10-15 minutes until lightly browned. Serve warm with butter and jam or lemon curd, and a glass of Ben Shaws Cloudy Lemonade!
